We have an oven!

 got so excited with cooking and baking again that I almost forgot to tell you! We got an oven! YAY!! After nearly four months of being ovenless, we’ve finally got an oven! Life has been hard without an oven. You forget that you don’t have one and you say Hey, I’d like to make a cake today…but you can’t (unless of course you make a microwave cake) because you don’t have an oven to bake it in!

You might wonder, why don’t you have an oven and why did it take you 4 months to get one?! Well you may recall that I said we were moving a few months back. We’ll I’m really not sure if I mentioned we were moving countries again! So an international move is a lot of work. Our flat in the Middle East came completely unfurnished. That means no curtains, no fridge, no oven…just a big empty space. So when we left it also needed to be completely unfurnished. Which means I had to sell by big, fancy, shiny dual fuel Bompani cooker (I didn’t know what a cooker was until I moved to there, apparently that’s what they call ovens or stoves there).  And it had to be sold before we moved out so four months ago we parted ways and I cooked my last meal, a delicious beer dough pizza and said goodbye.

So why didn’t we get a new oven right away? Well we sold the oven a few weeks before we moved out, and then we left the country about 3 weeks later so that was a whole month. And then we got to Singapore (Oh yeah, by the way we moved to Singapore because I got a fantastic new teaching job teaching SCIENCE  again ←love love love!!!) Well, it turns out that ovens are not a standard feature in housing here!! Locally, they don’t do a lot of cooking at home and they don’t bake many things so rice cookers are popular and most flats come furnished with only a hob (two burners built into the countertop).  So finding an oven was tricky! And they were spendy as well! The oven that I sold for $600 sells for over $2000 here! Yikes!!! We tried to buy used but that’s difficult when you don’t have a car to transport things so it took some time to find one! Oh and a place to put it! Because stand alone ovens us American’ are used to are not the norm here! Instead they are built into cabinets and guess what, our trendy new flat…no oven cabinet!

Luckily, we found a very inexpensive oven cabinet at Ikea that gave us some additional counter space to work with (double yay!) and then after lots of shopping we found this shiny new Bosch oven on sale! So, finally after four months without I have my lovely new oven and I’ve been baking up a storm.

And of course, for continuity our first meal with the new oven? Well of course it was pizza!

Where not to leave your engagement ring

What is the first thing you do when you come home from work? I have to have a routine, mostly because if I don’t I lose things. J has been really good at pointing this out to me. For example, when I’m running late for work in the morning and I’m frantically running through our flat yelling “Have you seen the car keys?” He will calmly point out to me that if just put them in the same place everyday, they would be easy to find. Simple, right? It’s not that I’m a disorganized or messy person. It’s just that I have a very short attention span. Easily distracted. So when I get home I usually have a million things running through my mind that I want to accomplish right this second.
Having a routine helps with this, but sometimes I still get side tracked. I’m getting better though, I swear. Everyday when I come home now, first I put my lunch bag back in the kitchen and empty out the dirty dishes. Then I put my car keys on the table by the front door and my school bag in the bedroom by the dresser so O can’t go digging through it. Then I take off my jewelry for the day. My bracelets and necklaces go on the pretty blue dish and the big sparkly ring goes back in its little box and then I can go about relaxing and enjoying the day.
I feel like most people are divided on this. Do you take off your engagement or wedding rings when you get home? I understand the school of thought that if you take it off you’re more likely to lose it. But it’s hot in the desert and my fingers swell like little sausages so I get home and it comes off. It stays cleaner this way too. Have you ever tried to clean dried dough or eggs out of the little crevices on a ring?? Or for that matter dried dough off of anything? There’s a reason they use flour and water to make paste! It sticks, for like, ever!
The other day I came home and was in a hurry to get into the kitchen. I think I was making pizza dough for dinner, some kind of dough. And I’d skipped the remove jewelry step and was about to plunge my hands into a bowl of sticky, flour-ry dough and get to kneading when I realized I still had on the big sparkly ring. Ooops. Dilema…do I stop what I’m doing, wash my hands, head back to the bedroom and put the ring away? Or do I just wiggle it off and plop it on top of my kitchen notebook on the counter?
I chose the latter. J didn’t seem to amused however when he came in to check what I was cooking and noticed it, plopped there on the counter, surrounded by flour and other impending goo.
However, once he pointed this out, I thought it was a really pretty picture. But probably not the best place to put your engagement ring. Particularly if you’d like to remain engaged.

In Search of the Perfect Chocolate Cake

Do you use cake mix? Or make it from scratch? I’ve always been a fan of the cake mix. I add things to it. I make fancy frostings and decorations. I make piggy pop cake pops. But I usually stick to the mix for the basic chocolate or white cake.  It’s a little funny I suppose because I insist that everything else must be homemade. I don’t particularly like to take shortcuts. But usually I’m using cake as a part of something else and not making cake for the sake of cake so I look at the cake mix as an ingredient more so than a mix. Plus I can never remember to buy cake flour (easy substitute, btw if you’re forgetful like me, swap two tablespoons of corn starch for two tablespoons of all purpose flour for each cup of flour a recipe calls for).

And I found this amazing cake mix. I mean really, it is the moistest, most delicious chocolate cake ever. And it comes from a bag.  J loves it. I make something with this cake mix every week almost. It’s gotten so bad that we make excuses to make cake. And then stand in the kitchen and eat it while it’s still cooling on wire racks.  No big deal, right? Why mess with what’s already perfect and delicious, right?

But we’re moving and now I don’t know if I’ll be able to purchase that cake mix still. And I use it all the time. So I have to figure out something that tastes similar. And is hopefully just as easy. Okay, well I’m probably not going to get a chocolate cake recipe that’s as easy as just adding eggs, water and oil, but a girl can dream right?

My first attempt at making my own version of this cake turned out really good. But the chocolate isn’t quite right. It’s more like a semi-sweet chocolate taste and I’m going for a rich cocoa taste. Not that this recipe isn’t worth sharing with you. It’s a dense, slightly brownie like cake. It just means I have more tinkering with chocolate cake to try. I’m not quite sure how to modify it to get that taste that I’m looking for. Oil instead of butter?  A different brand or more cocoa? More eggs? Any suggestions are welcome!

Chocolate Cake
Author: 
Recipe type: dessert
Serves: 24 cupcakes or 2 8″ rounds
 

Ingredients
  • ½ cup unsweetened cocoa powder
  • ½ cup boiling water
  • 2 cups cake flour, sifted,
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ¾ cup sugar
  • 1 cup butter
  • 3 eggs
  • 2 teaspoons vanilla
  • ½ cup plain yogurt

Instructions
  1. In a small bowl, sift cocoa powder and add boiling water. Mix until well combined and set aside to cool.
  2. In another bowl combine flour, baking soda, baking powder and salt and stir to mix the ingredients well.
  3. In a third, larger bowl (I know, this already has three bowls, it’s definitely not as easy as cake from a mix, but it’s yummy, I promise!) beat the butter until fluffy, about three or four minutes and then add the sugar and continue to beat for another three or so minutes. Add the vanilla and one egg at a time, beating each egg until it is well combined (it shouldn’t look slimy or shiny) before adding the next egg.
  4. Get that cocoa mixture that you set aside and resist the urge to dip your finger in it and taste! It’s bitter because the sugar hasn’t been added yet. I was bad and I let J try it. His bitter face was priceless! Bad Nikki, don’t let people try things you know don’t taste good! Now, add the yogurt to the chocolate and whisk together (I need a mini whisk, not that a fork doesn’t work just fine for this, but aren’t mini kitchen implements much more fun?!).
  5. Now, back to the butter and eggs. With the mixer on low add a scoop of the flour mixture and mix until well incorporated. Then add some chocolate mixture and repeat and scrape sides of the bowl. Continue alternating until everything is in one bowl.
  6. Scoop the mixture (about ¼ a cup) into lined muffin tins or pour into two greased and floured 8 inch round pans and bake on the center rack at 350F until a toothpick inserted in the center comes out clean. 20-22 minutes for cupcakes or 30-35 minutes for cakes.
  7. Place on wire rack to cool completely and top with your favorite frosting (I made raspberry buttercream but just about anything goes with chocolate cake, right?)

I’m back!

I’m baaack! Goodness, where does the time go? I can’t believe it’s been almost a month since I’ve posted anything here, it’s just been a busy, busy time! I’m happy to report that J made it back safely from his vacation in the States and brought back with him a plethora of delicious goodies from home. Cheez-Its and Red Vines and Reese’s, oh my! He also returned with nearly 10 pounds of my delicious, can’t live without, Tillamook Cheese! Seriously! When we started dating, I introduced him to my beloved Tillamook (the best cheddar in the WORLD, in case you didn’t know! Seriously, the Gold Standard in Cheddar. I mean have you tried it yet?? And no, they don’t pay me to say that! ) and he was instantly hooked. I haven’t had the pleasure of taking him to the Tillamook Cheese Factory hopefully I’ll get him to the source of the deliciousness eventually. But really, they don’t sell my yummy cheese here, so whenever one of us is home, we bring back cheese. This time I have Medium Cheddar AND Pepper Jack. I know, I know, I’m spoiled!Also, I’m happy to report that as expected, the magical kitchen elves returned from vacation on the SAME day as J.  So there aren’t any dirty dishes in the sink and the trash has begun to take itself out again. Hooray! Love my kitchen elves *wink, wink*.

Hell in a Hand Basket!

Oh my goodness. Today was def one of those days. Everything has gone to hell in a hand basket. Growing up my mom used to always say that when things got too hairy. Things were always going to hell in a hand basket. I’m not sure why they were traveling in a hand basket, a nice tote or a lovely purse might have been a better way to travel. I suppose if you’re going to hell though you aren’t overly concerned about the mode of transportation or your luggage.

The day started with bad news. One of our teacher’s has flown the coop. A family emergency took her out of the country two weeks ago and we were expecting her return today but instead there was an email letting us know that she wouldn’t be returning. Ouch. Of course, I hope that everything is okay and I’m sympathetic that she is having a rough time, but still, ouch. Being down a teacher is never fun.

That was just the beginning. Some lovely gentleman showed up to work on the bell system. I’ I don’t know if that works on a timer or if a person rings it…but apparently it needs to be repaired. And this meant that it rang about every ten minutes for the whole first period of the day. Which meant that another teacher decided to release her students when she heard a bell. About 15 minutes into first period which happpens to be my prep period. So 20 girls showed up to my class 30 minutes early. And then grades are due today and of course the server that we input them in wants to crash every ten minutes so people are stressed. And then at the end of the day my classroom was invaded by a team of people who wanted me to prep the room for standardized testing that starts Sunday. Like, right now. In the middle of my class. So the tables have to go (yay!) and desks have to come in. And they have to be lined in rows. And then stickers have to be attached to desks. And then everything has to be removed from the walls or covered. And I’m supposed to be teaching!!!

So it was definitely one of those days where I needed to come home and work it out in the kitchen. Some good old fashioned dough kneading stress relief followed by a yummy dinner. I made these delicious pumpkin ravioli (and destroyed the kitchen in the process).

But while I was waiting for my pasta dough to rest, I decided to go run it out for a bit. And I totally forgot about the produce that I’d picked up on the way home. And to close the kitchen door. And O decided to that she likes apples. She’s been taking all sorts of liberties since J left for vacation. Oh will she be in for a world of hurt when he gets home!

My Kitchen Elves Have Gone Missing!!

messy sinkI really wanted to have popcorn tonight, but I went to the kitchen and the pan I cook popcorn in was dirty in the sink. Boo. I decided to have a bowl of cereal instead…but then discovered that I didn’t have any clean spoons! What is happening?! Obviously my kitchen elves have gone missing. I should have noticed the signs earlier in the week when that strange light in my car came on. What is this strange light? Gas? I need to put that in the car myself? It didn’t fill itself this week?? Where ever my kitchen elves went they must have convinced the other elves to go with them.

What you don’t have kitchen elves? You remember that story about the elves and the shoemaker? The poor shoemaker and his wife got to sleep and when they wake up, magical little elves have made wonderful shoe for them. Well about 4 years ago, magical elves obviously moved in with me. J must have had them under contract or something. Because after we started dating I noticed magical little things happening. For example, the gas in my car always seems to magically refill. Toilet paper and paper towels replace themselves. The bed is made when I’m taking a shower. And most importantly the sink is never filled with dishes. They always seem to migrate from the sink to the drying rack on their own.

I suppose I should have anticipated this vacation. J went back to the States for a vacation and since the elves didn’t come to live with me until after J came to live here with me they surely were going to follow him home. But I miss them!
